Strawberry Banana Crepe

 

 

 

 



Ingredients

    1 cup flour - this could be all purpose, spelt, brown rice flour or whatever you have.

    2 eggs

    1/2 cup milk

    1/2 cup water

    1/4 teaspoon salt

    2 tablespoons butter, melted (coconut oil will work well also)

Filling
   6 strawberries, washed and sliced
   1 bananan, sliced
Chocolate Syrup
   2 tbsp coconut oil
   2 tbsp cocoa powder
   1 tbsp honey

Directions

 

 




Prepare your chocolate syrup by melting coconut oil and honey in a double boiler (you can also use a glass measuring cup in a sauce pan of boiling water).  Gradually mix in your cocoa powder until combined. 
  1. In a large mixing bowl, whisk together the flour and the eggs.
  2. Gradually add in the milk and water, stirring to combine.
  3. Add the salt and butter; beat until smooth.
  4. Heat a frying pan over medium high heat with a spoonful of butter or coconut oil.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe.
  6. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  7. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
  8. Serve hot.
  9. Prepare by topping crepes with strawberries, bananas and drizzling with chocolate syrup.
