Middle eastern Falafel ...yummy

 



 

 

Ingredients

2 cups of dried chickpeas
 1/4 cup shopped cilantro 
1 small chopped onion 
1/4 cup chopped fresh parsley
 fresh parsley
a handful of chopped fresh coriander
1 teaspoon freshly ground cumin
1 teaspoon freshly ground coriander seeds
¼ teaspoon cayenne pepper
1 teaspoon salt 
1 1/2 tbsp flour
 Pinch of ground cardamom
 3-5 cloves garlic
freshly ground black pepper
½ teaspoon baking soda
½ teaspoon baking powder
vegetable oil for deep frying

soak the chickpeas in water for at least 24 hours. rinse and drain the chickpeas, and spread them out on a dishtowel to dry while you prepare the remaining ingredients. put the chickpeas, onion, garlic, parsley, coriander, ground cumin, ground coriander seeds, cayenne pepper, salt, freshly ground black pepper, baking soda, and baking powder in the food processor and process until the chickpeas are thoroughly pureed and the ingredients form a very smooth dough - this can take up to 5 minutes of processing (remember to scrape down the sides of the bowl from time to time).
let the dough rest for 10 minutes. scoop out the dough, scraping the scoop flat on the side of the bowl, using tablespoon. form into balls and then flatten slightly to form small patties.
heat the oil to 350f. fry the falafel in four batches, turning them over when half done, until they are golden brown (if you put too many in the pan at one time, the oil’s temperature will drop and the falafel won’t cook right). when done, place each batch on paper towels to drain; falafel cooks quickly so watch carefully to make sure they don’t burn. serve immediately.

  • Tahini Sauce Ingredients
    • 1/4 cup sesame seeds
    • 1 green chilli sliced
    • 2 tbsp olive oil
    • 2 tbsp cilantro
    • 2 tbsp parsley
    • 1 tsp cumin seeds
    • 2 tbsp lemon juice
    • 1/4 cup water
    • salt to taste
    Tahini Preparation:
    Grind the above ingredients to a smooth paste and voila ready..
  • .Add it to the falafel you can serve in plate or pita bread ,I prefer pita open it from the side add the falafel you can also spread some hummus and add shopped salad ,cucumber tomatoes pickles and spread the tahini over it ...wow you should give it a try and if you have any question ask and I will response to you by comment...thanks for reading my recipe....
