Pomegranate Vinaigrette









  • 4 cups arugula
  • 1/2 cup pomegranate
  • 1/4 cup crumbled blue cheese
  • 2 tbsp pistachios, shelled

Pomegranate Vinaigrette
  • 1 tsp POM Wonderful pomegranate juice
  • 1 tsp balsamic vinegar
  • 2 tsp extra virgin olive oil
  • salt and fresh pepper

Whisk vinegar, pomegranate juice, olive oil, salt and pepper in a small bowl.

Place arugula on a plate, top with blue cheese, pomegranates, pistachios and vinaigrette.
